Caramel apple sandwiches

Ingredients

2 oz neufchâtel cheese, softened

2 Tbsp unpacked light brown sugar

2 Tbsp plain fat free greek yogurt

1/4 tsp vanilla extract

2 medium cored fresh apples

Directions

In a small bowl, stir cheese with a small whisk until smooth. Whisk in sugar, yogurt, and vanilla.

Cut each apple into 4 thick slices; spread about 1½ tbsp cream cheese mixture over each of 4 apple slices. Top with remaining apple slices.
